This simple banana bread is delicious, fast, and accidentally vegan.
- Preheat oven to 350 F.
- Peel bananas into a bowl and add the remaining wet ingredients.
- Blend the wet ingredients well. a. Use a potato masher or fork to have several banana chunks in the bread b. Use an immersion blender to make a smooth, fluffy liquid and fewer chunks.
- In a large bowl, mix the dry ingredients.
- Fold the banana mixture into the dry ingredients until well combined.
- (Optional) Fold in any optional ingredients.
- Pour the batter into a 9” round cake pan.
- Bake in preheated oven for 45 minutes to an hour.
